- 2 lbs hot mashed potatoes
- 12 lb spring onion
- 14 pint boiling milk
- 4 ounces melted butter
- 12 teaspoon salt
- 12 teaspoon white pepper
Directions

1Chop the onions small, both the green and the white parts, and cook them in the milk until soft.

2Drain, but don't throw away the milk.

3Beat the spring onions into the hot mashed potato.

4Add salt and pepper.

5Gradually add enough milk, and beat it in to give it a smooth consistency.

6Serve a helping on each person's warmed plate, and make a well in the middle to receive melted butter.

7To eat it, take a forkful of the potato, and dip it into the butter well.
