- 2 Tbsp. all-purpose flour
- 1/2 tsp. salt
- dash of pepper
- 4 chicken breast halves, skinned and boned
- 2 Tbsp. butter or margarine, melted
- 1 Tbsp. olive oil
- 3/4 champagne or dry white wine
- 1/4 c. sliced fresh mushrooms
- 1/2 c. whipping cream
Directions

1Combine flour, salt and pepper; lightly dredge chicken in flour mixture.

2Heat butter and olive oil in large skillet.

3Add chicken; saute on each side about 4 minutes each.

4Add champagne (or wine); cook over medium heat about 12 minutes, or until chicken is done. Remove chicken; set aside.

5Add mushrooms and whipping cream to skillet.

6Cook over low heat, stirring constantly, until just thickened.

7Add chicken; cook until heated.

8Makes 4 servings.
