- 6 potatoes (medium to large)
- 8 oz. sour cream
- 1/2 c. onion, diced
- 1 can cream of chicken soup (undiluted)
- 1/3 c. butter
- salt and pepper to taste
- 3/4 c. grated Cheddar cheese
- 2 Tbsp. green onions or chives, chopped
Directions

1Boil the potatoes and grate after they have cooled completely. Combine the sour cream, onion, soup, butter and 1/2 of the cheese and add to the grated potatoes.

2Salt and pepper to taste and mix well.

3Place in a 1 1/2 or 2-quart casserole dish.

4Spread the remainder of the cheese on top.

5Sprinkle parsley over top, if desired, for color.

6Bake at 325° for 20 to 25 minutes.

7Makes 4 to 6 servings.
