- 3 lb. cream cheese
- 1/2 tsp. pure vanilla
- 1/4 tsp. (heaping) salt
- 2 c. sugar
- 3 egg yolks
- 5 whole eggs
- 3/4 c. graham cracker crumbs
Directions

1Bring cream cheese to room temperature.

2Preheat oven to 350°. Cream down cheese to eliminate lumps.

3Add vanilla and salt.

4Mix, scraping sides continuously.

5Add sugar and mix.

6Add egg yolks and mix.

7Add whole eggs and mix.

8Mixer should make small, soft peaks. If too stiff, add small amounts of egg yolk.

9In a 10 x 2-inch spring-form pan, layer bottom with cracker crumbs.

10Rub sides of pan with vegetable oil.

11Add batter, shake gently to eliminate bubbles.

12Bake until center is firm (45 to 55 minutes).

13Cool. Remove from pan.

14Freeze 24 hours before slicing or serving.
