Cheap Eats: Ham Bone Soup

  • 1 pound Dried White Beans
  • 6 cups Water, Plus More For Soaking Beans
  • 4 stalks Celery With Leaves, Finely Chopped
  • 1 whole Onion, finely chopped
  • 6 cloves Garlic, Pressed
  • 1 whole Bay Leaf
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoons Salt, More To Taste
  • 1 pinch Pepper
  • 1 whole Ham Bone
  • Additional Leftover Ham Chunks (if Available)

Directions

    Soak beans overnight in 6-8 cups hot water. Drain in the morning.

    Place soaked beans, 6 fresh cups of water, chopped veggies, seasonings and ham bone in your slow cooker. (I did a big pot on the stove since I doubled it.) If you have additional ham that you'd like to add, now's the time. You don't have to add any extra meat, but my hubby is a meat guy, so I added a good cup of our ham leftovers.

    Cook on low for 8 hours, or until you can't take the suspense any longer! Remove bay leaf and ham bone. Taste and re-season as necessary. Serve soup with cornbread.
