- 1 1/2 lb. carrots
- 1/4 c. butter (1/2 stick)
- 1/2 c. chopped onion
- 1 c. shredded Cheddar cheese
- 1/2 c. crushed crackers
- 1/2 tsp. salt
- dash of pepper
Directions

1Peel and slice carrots.

2Cook in small amount of boiling water, 15 to 20 minutes.

3Drain.

4In large skillet, melt butter.

5Add onion and saute until tender.

6Add carrots.

7Combine cheese, cracker crumbs, salt and pepper.

8Place half of carrots in a 1-quart casserole, then half of cheese cracker mixture.

9Repeat layers.

10Bake at 350° for 20 to 25 minutes.
