Cheddar Cheese Broccoli Cornbread

  • 1 stick margarine
  • 2 pkg. Jiffy cornbread mix
  • 1 (10 oz.) pkg. chopped frozen broccoli, thawed (not drained)
  • 1 onion, chopped
  • 1 (10 oz.) carton cottage cheese
  • 4 eggs
  • 1/2 c. shredded Cheddar cheese

Directions

    Melt margarine in a 9 x 11-inch pan. Mix all other ingredients, except cheese. Pour batter over melted butter and sprinkle cheese on top. Bake at 375° for 30 minutes or until brown.
