Cheddar Cheese Soup

- 1/2 c. chopped onion
- 2 Tbsp. margarine
- 3 Tbsp. Dijon mustard
- 1/8 tsp. white pepper
- dash of nutmeg
- 1 can (13 3/4 oz.) chicken broth
- 1 c. milk
- 2 c. shredded Longhorn Cheddar cheese
Directions

1In a large saucepan, saute onion in margarine until soft. Stir in flour, mustard, pepper and nutmeg.

2Gradually add broth, cook, stirring constantly, until smooth.

3Add milk, heat through. Remove from heat.

4Add cheese, stir until melted.

5Serve immediately. Garnish with chopped parsley, if desired.

6Serves 4, approximately 3/4 cup each.
