  • 5 large chicken breasts
  • 2 c. water
  • 3 green onions, chopped
  • 3 celery tops
  • 1 pkg. wild rice
  • 1/4 c. Cheddar cheese
  • 1/2 c. cashew nuts
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 3/4 c. crushed Cheddar cheese crackers

Directions

    Simmer breasts in water with onions and celery tops.

    Strain off broth and keep.

    Cool chicken and cut into chunks.

    Meanwhile, cook rice.

    Turn into greased casserole.

    Sprinkle rice with cheese.

    Cover with chicken and sprinkle with nuts.

    Pour over soup that was thinned with stock.

    Top with crackers.

    Bake at 350° for 30 minutes.
