- 5 large chicken breasts
- 2 c. water
- 3 green onions, chopped
- 3 celery tops
- 1 pkg. wild rice
- 1/4 c. Cheddar cheese
- 1/2 c. cashew nuts
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 3/4 c. crushed Cheddar cheese crackers
Directions

1Simmer breasts in water with onions and celery tops.

2Strain off broth and keep.

3Cool chicken and cut into chunks.

4Meanwhile, cook rice.

5Turn into greased casserole.

6Sprinkle rice with cheese.

7Cover with chicken and sprinkle with nuts.

8Pour over soup that was thinned with stock.

9Top with crackers.

10Bake at 350° for 30 minutes.
