- 2 c. boiling water
- 2 c. diced potatoes
- 1/2 c. sliced carrots
- 1/2 c. celery
- 1/4 onion
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. oleo
- 1/4 c. flour
- 2 c. milk
- 2 c. (8 oz.) shredded sharp Cheddar cheese
Directions

1Add water to potatoes, carrots, celery, onion, salt and pepper.

2Cover and simmer 10 minutes.

3Do not drain.

4Make white sauce with oleo, flour and milk.

5Add cheese, stir until melted. Add undrained vegetables.

6Heat but do not boil.
