- 1 1/2 c. all-purpose flour, unsifted
- 1 1/2 c. yellow cornmeal
- 1 Tbsp. baking powder
- 1 c. shredded Cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1 c. milk
- 1/2 c. honey
- 1/2 c. melted shortening
- 2 eggs
Directions

1Preheat oven to 400° or 425°.

2Combine flour with cornmeal, baking powder, cheese and bacon.

3Combine remaining ingredients in a separate bowl; beat well.

4Add liquid ingredients to dry ingredients; stir just until flour is moistened.

5Spoon into greased muffin cups, filling about 2/3 full, or well-greased and heated heavy cornstick pans, filling almost full.

6Bake muffins at 400° for 15 to 20 minutes and cornsticks at 425° for 8 to 10 minutes.

7Let stand a minute or two before removing from pans.
