  • 3 3/4 cups all-purpose baking mix
  • 1 1/2 cups shredded Cheddar cheese
  • 1 large egg
  • 1 (12-ounce) can evaporated milk
  • 1/2 cup chopped pecans, toasted

Directions

    Combine baking mix and cheese in a large bowl; make a well in center of mixture. Stir together egg and milk; add to dry ingredients, stirring just until moistened. Stir in toasted pecans, and spoon into greased muffin pans, filling two-thirds full.

    Bake at 375° for 12 to 15 minutes.
