- 6 c. thinly sliced, unpeeled zucchini, cooked and drained
- 2 slightly beaten egg yolks
- 1 c. sour cream
- 2 Tbsp. flour
- 2 stiffly beaten egg whites
- 1 1/2 c. shredded Cheddar cheese
- 6 slices bacon
- 1 Tbsp. melted butter
- 1/4 c. fine bread crumbs
Directions

1Salt cooked squash.

2Mix egg yolks, sour cream and flour. Fold in egg whites.

3Layer half of the squash, egg mixture and cheese in a 12 x 7 x 2-inch baking dish.

4Crumble bacon; sprinkle on top.

5Repeat layers.

6Mix butter and crumbs; sprinkle over top. Bake at 350° for 20 to 25 minutes.
