Cheddar Squash Bake

  • 6 c. thinly sliced, unpeeled zucchini, cooked and drained
  • 2 slightly beaten egg yolks
  • 1 c. sour cream
  • 2 Tbsp. flour
  • 2 stiffly beaten egg whites
  • 1 1/2 c. shredded Cheddar cheese
  • 6 slices bacon
  • 1 Tbsp. melted butter
  • 1/4 c. fine bread crumbs

    Salt cooked squash.

    Mix egg yolks, sour cream and flour. Fold in egg whites.

    Layer half of the squash, egg mixture and cheese in a 12 x 7 x 2-inch baking dish.

    Crumble bacon; sprinkle on top.

    Repeat layers.

    Mix butter and crumbs; sprinkle over top. Bake at 350° for 20 to 25 minutes.
