Cheddar Squash Bake

Ingredients
- 2 lb. yellow squash
- 1 c. sour cream
- 2 beaten egg yolks
- 2 Tbsp. flour
- 2 stiffly beaten egg whites
- 1 1/2 c. shredded cheese
- 4 slices crisp bacon, crumbled
- 1/3 c. fine bread crumbs
- 1 Tbsp. melted butter
Directions

1Cook squash in small amount of water until tender.

2Drain well.

3Sprinkle with salt.

4Reserve a few slices for garnish.

5Mix sour cream, egg yolks and flour.

6Fold in egg whites.

7In a 12 x 7 1/2 x 2-inch baking dish, layer half the squash, half egg mixture, half the cheese and sprinkle bacon on top.

8Repeat layers. Combine crumbs and butter and sprinkle on top.

9Bake uncovered at 350° for 20 to 25 minutes.

10Top with bacon and parsley.
