Cheddar Zucchini Bake

Ingredients
- 2 lb. zucchini, thinly sliced
- salt and pepper
- 2 eggs, separated
- 1 c. sour cream
- 1 1/4 c. grated Cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1 Tbsp. butter or margarine
- 1/4 c. fine dry bread crumbs
Directions

1Cook zucchini until tender and drain.

2Sprinkle with salt and pepper to taste.

3Combine egg yolks, sour cream and flour. Beat egg whites until stiff and fold into sour cream mixture.

4Place half the zucchini in an 11 x 7-inch baking dish.

5Top with half the sour cream mixture and half the cheese.

6Sprinkle crumbled bacon over cheese.

7Layer remaining zucchini, sour cream mixture and cheese.

8Melt butter and stir in crumbs.

9Sprinkle over cheese.

10Bake at 350° for 20 to 25 minutes.

11Makes 8 to 10 servings.
