- 1 tsp. minced onion
- 1 lb. cream cheese
- 1/2 lb. grated Colby-Monterey Jack cheese
- 1 small can crushed pineapple, drained
- 1/2 finely chopped mango pepper
Directions

1Combine all ingredients.

2You should have enough for 2 nice size cheese balls.

3Allow to rest in the refrigerator a couple of hours.

4Chop 1 cup of pecans; divide the cheese ball in half. Roll each ball in chopped pecans; wrap in plastic.

5Place in the refrigerator until time to serve.

6Serve with party crackers.
