  • 2 (8 oz.) cream cheese
  • 1 (8 1/2 oz.) can crushed pineapple, drained well
  • 1 Tbsp. salt
  • 1/2 c. bell pepper, chopped fine
  • 1/4 c. chopped onion
  • 2 c. chopped pecans

Directions

    Blend softened cream cheese and pineapple together.

    Set 1 cup pecans aside.

    Mix all remaining ingredients with cream cheese mixture.

    Roll into balls or logs.

    Refrigerate overnight. Remove.

    Roll in 1 cup pecans.

    Top with cherries or olives, if desired.
