- 1 pkg. Duncan Hines yellow cake mix (reserve 1 c.)
- 1 egg
- 2 Tbsp. oil
- 2 (8 oz.) pkg. cream cheese
- 1/2 c. sugar
- 3 eggs
- 1 1/4 c. milk
- 3 tsp. vanilla
- 3 Tbsp. lemon juice
- cherry pie filling (if desired)
- Cool Whip (if desired)
Directions

1Add 1 egg and oil to cake mix.

2Mix well (will be dry).

3Press on bottom of 9 x 13-inch cake pan.

4Cream the cream cheese with sugar. Add 3 eggs and rest of the cake mix.

5Add milk, vanilla and lemon juice; beat until smooth.

6Pour into crust and bake 55 minutes at 325°.

7When cool, top with cherry pie filling and Cool Whip before serving, if desired.
