  • 1 pkg. Duncan Hines yellow cake mix (reserve 1 c.)
  • 1 egg
  • 2 Tbsp. oil
  • 2 (8 oz.) pkg. cream cheese
  • 1/2 c. sugar
  • 3 eggs
  • 1 1/4 c. milk
  • 3 tsp. vanilla
  • 3 Tbsp. lemon juice
  • cherry pie filling (if desired)
  • Cool Whip (if desired)

Directions

    Add 1 egg and oil to cake mix.

    Mix well (will be dry).

    Press on bottom of 9 x 13-inch cake pan.

    Cream the cream cheese with sugar. Add 3 eggs and rest of the cake mix.

    Add milk, vanilla and lemon juice; beat until smooth.

    Pour into crust and bake 55 minutes at 325°.

    When cool, top with cherry pie filling and Cool Whip before serving, if desired.
