Cheese-Chili Cubes

- 8 eggs or 4 c. egg substitute for low cholesterol diets
- 1/2 c. Bisquick or any baking mix
- 3 c. shredded Monterey Jack cheese (12 oz.)
- 1 1/2 c. cream-style cottage cheese (12 oz.)
- 2 cans (4 oz.) mild green chilies, seeded, rinsed and chopped
Directions

1In a large bowl beat the eggs using electric mixer for 4 or 5 minutes until light.

2Add the baking mixture and mix well.

3Fold in the cheese, cottage cheese and chilies.

4Turn mixture into greased 9 x 9 x 2-inch baking dish.

5Bake in 350° oven for 40 minutes.

6Remove from oven and let stand for 10 minutes.

7Cut into small squares.

8Can be served either warm or cool.

9Yields 3 to 4 dozen appetizers.
