Ingredients
- 1 lb. ground beef
- 1 can cream of chicken soup
- 1 soup can of milk
- 12 slices (1/2 lb.) processed American cheese
- 1 small jar pimentos, chopped and drained
- 20 tortillas
- 1/2 c. Cheddar cheese
- 1 c. chopped onion
- 1 small can green chilies, chopped and drained
Directions

1Brown beef and onion.

2Combine cream of chicken soup, milk and American cheese in saucepan.

3Cover over low heat until cheese melts, stir constantly.

4Add pimentos and green chilies; set aside.

5Soften tortillas in microwave.

6Add Cheddar cheese to cooled beef.

7Fill tortillas with beef mixture.

8Roll to enclose filling.

9Place in a dish.

10Pour cheese mixture over enchiladas. Bake covered for 30 minutes at 350°.
