  • equal amount grated Cheddar and Jack cheese (about 3/4 c. each)
  • chopped green onions
  • 1 large can enchilada sauce (20 oz.)
  • 13 corn tortillas

Directions

    Mix cheese and onions (keep out a little cheese to top enchilada with).

    Next, heat the enchilada sauce.

    Dip the tortillas in sauce to soften.

    Fill with cheese-onions and roll up.

    Place them, seam side down, in a glass baking pan.

    Pour the rest of the enchilada sauce over and sprinkle remaining cheese on top.

    Bake at 350° until heated through and cheese is bubbly.
