- 1/4 c. grated Parmesan cheese
- 1/4 c. diced Swiss cheese
- 1/4 tsp. black pepper
- 1/8 tsp. nutmeg
- 4 Tbsp. butter
Directions

1Beat the eggs very lightly in a bowl.

2Add the remaining ingredients, except the butter.

3Melt the butter in a 9-inch skillet or omelette pan, letting it heat until it has a nutty fragrance, but it is not browned.

4Pour the egg mixture into the pan; cook over low heat until lightly browned, pulling the mixture from the sides of the pan with a fork as it cooks.

5Turn and brown lightly on the other side.
