- 12 medium potatoes
- 6 Tbsp. butter
- 2 1/4 c. shredded Cheddar cheese
- 1 to 1 1/4 c. milk
- 3/4 to 1 tsp. salt
- 2 eggs, beaten
Directions

1Peel potatoes and cook until tender.

2Drain and mash thoroughly.

3Add butter, cheese, milk and salt.

4Beat until butter and cheese are melted.

5Fold in eggs and pour into a greased 13 x 9-inch pan.

6Sprinkle top with a little shredded Cheddar cheese. Bake at 350° for 30 to 45 minutes, until puffy and golden brown.
