- 12 md. potatoes, peeled
- 1 tsp. salt, divided
- 3/4 cup butter
- margarine
- 2 cups cheddar cheese, shredded
- 1 cup milk
- 2 eggs, beaten
- Fresh
- dried chives (optional)
Directions

1Place potatoes in a large kettle; cover with water.

2Add 1/2 tsp.

3salt; cook until tender.

4Drain; mash potatoes until smooth.

5In a saucepan, cook and stir butter, cheese, milk and remaining salt until smooth.

6Stir into potatoes; fold in eggs.

7Pour into a greased 3-quart baking dish.

8Bake, uncovered, at 350F for 40 minutes or until puffy and golden brown.

9Sprinkle with chives if desired.
