- 12 medium potatoes
- 6 Tbsp. margarine
- 2 1/4 c. grated cheese (Cheddar or Velveeta)
- 1 to 1 1/4 c. milk
- 3/4 tsp. salt
- 2 eggs, beaten
Directions

1Cook peeled potatoes in salted water until tender.

2Drain; mash thoroughly.

3Add butter, cheese, milk and salt; heat over low heat until butter and cheese is melted.

4Fold in eggs and pour into greased 9 x 13 x 2-inch dish.

5May make ahead.

6Bake at 350° for 30 to 45 minutes, or until puffy
