Cheese-Potato Puffs

  • 12 medium potatoes
  • 6 Tbsp. margarine
  • 2 1/4 c. grated cheese (Cheddar or Velveeta)
  • 1 to 1 1/4 c. milk
  • 3/4 tsp. salt
  • 2 eggs, beaten

Directions

    Cook peeled potatoes in salted water until tender.

    Drain; mash thoroughly.

    Add butter, cheese, milk and salt; heat over low heat until butter and cheese is melted.

    Fold in eggs and pour into greased 9 x 13 x 2-inch dish.

    Bake at 350° for 30 to 45 minutes, or until puffy
