- 10 potatoes (do not peel)
- 1 green pepper, diced
- 1 small onion, diced
- 1 Tbsp. dried parsley flakes
- 3/4 c. milk
- 1 1/2 sticks butter, cubed
- 1 lb. Velveeta cheese, diced
- 1 tsp. salt
- 1/4 tsp. ground pepper
Directions

1Boil potatoes until tender; peel.

2Cut into medium size pieces.

3Mix all ingredients together in large casserole dish. Cover.

4Bake at 375° for 1 hour or until cheese is melted.
