  • 10 potatoes (do not peel)
  • 1 green pepper, diced
  • 1 small onion, diced
  • 1 Tbsp. dried parsley flakes
  • 3/4 c. milk
  • 1 1/2 sticks butter, cubed
  • 1 lb. Velveeta cheese, diced
  • 1 tsp. salt
  • 1/4 tsp. ground pepper

Directions

    Boil potatoes until tender; peel.

    Cut into medium size pieces.

    Mix all ingredients together in large casserole dish. Cover.

    Bake at 375° for 1 hour or until cheese is melted.
