- 2 Tbsp. chopped onion
- 1 bell pepper, chopped
- 2 Tbsp. butter
- 1 1/2 c. canned tomatoes
- 3 1/2 c. cooked rice
- 1/4 tsp. salt
- dash of pepper
- 1 1/2 c. grated cheese
Directions

1Cook onion and bell pepper in butter until tender.

2Add tomatoes and rice.

3Slowly cook until rice has absorbed liquid. Add seasonings and cheese.

4Pack into buttered ring mold.

5Unmold onto serving plate and fill with scrambled eggs.

6Makes 6 servings.
