- 180 g self raising flour
- 30 g butter
- 1 large egg
- 2 -2 12 tablespoons milk
- 125 g grated cheese (use whatever strength you prefer)
- 12 teaspoon salt
- 12 teaspoon mustard powder
- cayenne pepper
Directions

1Put a shelf high in the oven and pre-heat to 220C/425F/Gas Mark 7.

2Mix the flour, salt and pepper together.

3Rub in the butter and then mix in the cheese.

4Beat the egg and add in the milk; add mixture to the dry ingredients to make a soft, elastic dough.

5Roll out the mixture on a floured surface but not too thinly.

6Cut into round shapes and place on a well greased tray.

7Brush the top with milk and sprinkle a little extra cheese and pepper on top.

8Bake until golden brown, about 12-15 minutes.

9Serve warm with butter.
