- 1/4 c. margarine or butter
- 8 oz. (2 c.) shredded Cheddar cheese
- 1 egg, separated
- 4 1/2 oz. can small shrimp, drained

1Microwave Directions:

2Arrange crackers on 2 napkin-lined plates.

3In medium microwave-safe bowl, microwave butter on High for 10 seconds to soften.

4Add cheese; blend well.

5Stir in egg yolk and shrimp.

6Beat egg white until stiff peaks form.

7Fold into cheese-shrimp mixture.

8Top each cracker with spoonful of mixture. Microwave 1 plate at a time on High for 1 minute.
