Ingredients

  • 1 Tbsp. diet margarine plus 1 tsp.
  • 1 Tbsp. minced onion
  • 2 Tbsp. enriched flour
  • 3/4 c. buttermilk
  • 2 oz. coarsely grated sharp Cheddar cheese
  • 1/4 tsp. each: powdered mustard and salt
  • 2 eggs, separated
  • dash of ground red pepper
  • 1/8 tsp. cream of tartar
  • 2 tsp. chopped chives

Directions

    Preheat oven to 375°.

    Melt margarine in saucepan.

    Add onion and saute until softened.

    Add flour and cook, stirring constantly, for 2 minutes.

    Remove pan from heat and stir in buttermilk.

    Return to heat and bring to a boil, stirring constantly.

    Add cheese, mustard and salt.

    Stir until cheese is melted.

    Remove from heat.

    Beat in egg yolks, one at a time.
