- 3 eggs
- 2 Tbsp. flour
- 2 Tbsp. butter
- 1 1/2 c. milk
- 1 c. grated cheese
- pinch of salt and dash of cayenne
Directions

1Make a white sauce of flour, butter and milk; add the beaten egg yolks, seasoning and grated cheese.

2Stir until cheese is melted.

3Let stand a few minutes to cool.

4Add stiffly beaten egg whites.

5Bake in a casserole in moderate oven about 25 minutes. Serve immediately.
