Ingredients
- 1 Tbsp. butter
- 1 Tbsp. Swiss cheese, grated
- 3 Tbsp. butter, melted
- 3 Tbsp. flour
- 1 c. hot milk
- 4 egg yolks
- pinch each of salt, pepper and nutmeg
- 5 egg whites
- 1/2 tsp. salt
- 3/4 c. sharp Cheddar cheese, coarsely grated
Directions

1Preheat oven to 400°.

2Grease 1 1/2-quart souffle dish with butter and sprinkle with Swiss cheese.

3Stir flour and melted butter together.

4Let foam and cook 2 minutes without browning. Remove from heat, pour in hot milk and beat.

5Return to heat and boil, stirring for 1 minute.

6Sauce will be very thick.

7Remove from heat and beat the egg yolks into the hot mixture, one at a time.

8Add salt, pepper and nutmeg to taste.
