- 3 diced carrots
- 1 onion
- 1 stick butter
- 1/2 (14 oz.) cauliflower and broccoli
- 2 cans chicken broth
- 1 can cream of potato soup
- 16 oz. chopped Velveeta cheese
- 1 small carton sour cream
Directions

1Saute carrots and onion in stick of butter.

2Blend in food processor, chop fine.

3Remove and put into stock pot.

4In food processor, finely chop cauliflower and broccoli.

5Add vegetables to chicken broth; homemade can be used.

6Simmer for 30 minutes. Add potato soup and chopped Velveeta cheese.

7Simmer 10 minutes over very low heat.

8Just before serving, stir in a small carton of sour cream.
