Ingredients

  • 1/4 c. butter
  • 3 green onions, chopped
  • 3 stalks celery, chopped (with some leaves)
  • 2 grated carrots
  • 2 cans (10 3/4 oz.) chicken broth
  • 3 cans (10 3/4 oz.) cream of potato soup
  • 8 oz. grated Cheddar cheese
  • 1 Tbsp. minced fresh parsley
  • 3 shakes Tabasco sauce
  • 8 oz. sour cream
  • salt and pepper to taste
  • 3 Tbsp. sherry

Directions

    Melt butter and saute onions, celery and carrots over low heat. Add chicken broth and simmer 30 minutes.

    Add potato soup, cheese, parsley, Tabasco sauce, salt and pepper.

    Stir in sour cream and simmer 15 minutes.

    Add sherry.

    Stir and serve.
