Ingredients

  • 1/2 c. margarine
  • 1 c. onions, finely chopped
  • 1 c. celery, finely diced
  • 1 c. carrots, finely diced
  • 1/2 c. flour
  • 1 1/2 Tbsp. cornstarch
  • 1 qt. chicken stock
  • 1 qt. milk
  • 1/8 tsp. soda
  • 1 c. processed Cheddar cheese (Longhorn)
  • 2 Tbsp. finely chopped parsley

Directions

    Melt margarine.

    Add onions, carrots and celery and saute until soft.

    Add flour and cornstarch and cook until bubbly.

    Add stock and milk and make smooth sauce.

    Add soda and cheese. Season with salt and pepper.

    Garnish with chopped parsley.

    Very good and a nice soup to serve to a ladies luncheon.
