Ingredients

  • 4 chicken bouillon cubes
  • 1 quart water
  • 1 cup celery, diced
  • 1 cup onions, diced
  • 2 1/2 cups potatoes, cubed
  • 1 cup carrots, diced
  • 1 10 oz. pkg. frozen mixed vegetables
  • 1 can cream of chicken soup
  • 1/2 large can evaporated milk
  • 1 lb. velveeta cheese, cubed

Directions

    In large pot, combine bouillon cubes, water, celery, onions and cook for 20 minutes.

    Next, add potatoes, carrots, and mixed vegetables and cook for another 30 minutes.

    Next, add cream of chicken soup, 1/2 can of water, evaporated milk, and velveeta cheese.

    Bring to a slow boil.

    Turn heat down and simmer for 5 minutes.

    Serves 6.
