- 1 qt. chicken broth
- 2 large or 3 small potatoes
- 1/2 small onion, chopped
- 1 lb. Velveeta cheese
- 1 c. water
- 1/2 c. cream of celery soup or 2 stalks celery, chopped
Directions

1Cook potatoes, onion and celery in 1 cup water.

2When soft, mash in cooking water.

3Put chicken broth in double boiler and bring to a boil.

4Add potato mixture.

5Add grated Velveeta cheese and salt to taste.

6(Chicken bouillon granules can be added if desired.)

7Cook in double boiler until cheese melts.

8Serve plain or with croutons.

9Serves 6 to 8.
