  • 1 onion
  • 3 stalks celery
  • 3 carrots
  • 1/2 stick butter
  • 2 cans potato soup
  • 2 cans chicken broth
  • 1 lb. Velveeta cheese
  • 1 carton sour cream (small)

Directions

    Finely chop (with processor) onion, celery and carrots and saute in butter.

    Add soup, broth and cheese.

    Cook and then add the sour cream before serving.

    (This freezes well without the sour cream.)
