- 2 c. milk
- 1 c. cornmeal
- 1/4 c. butter, softened
- 1/2 c. (2 oz.) shredded mild Cheddar cheese
- 4 eggs, separated
- 1 tsp. salt
Directions

1Place milk in top of a double boiler over boiling water; cook until hot.

2Stir in cornmeal; cook stirring until thickened. Remove from heat; stir in butter, cheese, yolks and salt.

3Stir until cheese melts.

4Beat egg whites at room temperature until stiff peaks form; fold into cornmeal mixture.

5Pour into greased 2-quart casserole; bake at 350° for 30 to 35 minutes or until puffed and browned.

6Serve immediately.
