Cheese Stuffed Peppers

  • 2 large green peppers, halved and seeded
  • 1/2 c. pasteurized cheese
  • 1/4 c. seasoned dry bread crumbs
  • 1/2 tsp. paprika (optional)
  • boiling water
  • 1 (10 oz.) pkg. frozen vegetables
  • 1 Tbsp. butter or margarine, softened

Directions

    In a medium saucepan, cook peppers 3 minutes in boiling water to cover; drain.

    Place in baking dish, cut side up.

    Mix cheese and vegetables.

    Fill peppers.

    In small bowl, mix crumbs and butter until blended.

    Sprinkle over vegetable mixture.

    Sprinkle with paprika.

    Bake in preheated oven at 400° for 15 minutes or until vegetables are heated through and the crumbs are lightly browned.
