- 8 oz. Cheddar cheese
- 4 Tbsp. butter, softened
- minced parsley (optional)
- 1/2 c. ruby Port
- paprika
- minced nuts
Directions

1Grate cheese very fine, then warm to room temperature.

2Beat together with soft butter until fluffy.

3Stir in Port gently so as to leave streaks of color.

4Press into a ball and roll in nuts, paprika or parsley or pack in serving crock.

5Refrigerate a few days before using.

6Serve at room temperature.

7Makes about 2 1/2 cups.
