  • 2 c. (1 lb.) small-curd creamed cottage cheese
  • 1/2 tsp. each dried basil and oregano leaves, crumbled
  • 1 (2 1/4 oz.) can sliced ripe olives, drained
  • 1 egg, slightly beaten
  • 4 Tbsp. all-purpose flour
  • 5 c. thinly sliced zucchini or other summer squash (about 1 1/2 lb.)
  • 1 medium onion, chopped
  • 1 clove garlic, minced or pressed
  • 2 Tbsp. butter or margarine
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • grated Parmesan cheese
