Ingredients

  • 2 C. All purpose flour
  • 2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1/2 C. Granulated sugar
  • 2 Eggs
  • 1 C. Light cream
  • 1/3 C. Ketchup
  • 1 C. Celery, chopped finely
  • 1 Chicken burger, cooked and chopped finely
  • 1/3 C. Spinach leaves, chopped finely

Directions

    Preheat oven to 375 degrees Fahrenheit

    Grease a 12 cup muffin pan and set aside
  3. 3
    In a large bowl combine cream and eggs together
  4. 4
    Stir with a wire whisk until mixture is frothy
  5. 5
    Pre cook spinach leaves in boiling salted water for a few minutes until mixture comes to a boil and then pour off excess water and set aside
  6. 6
    Add cooled chopped spinach leaves, ketchup, celery and cheese to egg mixture and mix until well combined
  7. 7
    Stir in dry ingredients with wire whisk and mix all together
  8. 8
    Pour batter into greased muffin cups filing 2/3 full and bake in oven for 20 minutes

    Place on a serving platter for dinner time
