Ingredients

  • 1/2 lb. ground chuck
  • 3/4 c. onion
  • 3/4 c. carrot, shredded
  • 3/4 c. celery, sliced
  • 1 tsp. basil
  • 1 tsp. parsley
  • 4 Tbsp. margarine
  • 3 cans chicken broth
  • 4 c. potatoes, diced
  • 1/4 c. flour
  • 8 oz. Velveeta
  • 1 1/2 c. milk
  • 3/4 tsp. salt
  • 1/4 tsp. pepper

Directions

    Brown meat, set aside.

    Saute onion, carrot and celery in 2 tablespoons margarine for about 10 minutes.

    Add chicken broth, potatoes and sauteed vegetables.

    Cook about 15 minutes until potatoes are done.

    Put 2 tablespoons margarine in skillet with 1/4 cup flour.

    Make a roux.

    Put in vegetables and meat.

    Turn on low and stir in cheese and milk until cheese is melted.

    Serve hot with corn bread.
