  • 9 lb. cream cheese
  • 4 lb. 8 oz. sugar
  • 1 lb. 4 oz. butter
  • 1 lb. 8 oz. sour cream
  • 1 oz. lemon juice
  • 1 lb. 8 oz. milk
  • 3 lb. eggs
  • 11 oz. cornstarch

Directions

    Cream and smooth the cream cheese, butter and sugar.

    Whip eggs and cornstarch, then lemon juice and sour cream.

    Add the portions, then add milk slowly.

    Bake in a water bath at 350° until the top cracks, but not too brown.

    Let cool and take out of pan.

    Yields 3 cheesecakes.
