- graham cracker crumbs
- 1 lb. Ricotta cheese
- 2 (8 oz) pkg. cream cheese, softened
- 1 1/2 c. sugar
- 4 eggs
- 1/3 c. cornstarch
- 2 Tbsp. lemon juice
- 1 tsp. vanilla
- 1/2 c. margarine, melted
- 1 pt. sour cream
Directions

1Grease a 9-inch spring-form pan; sprinkle graham cracker crumbs.

2Sieve Ricotta cheese into large bowl.

3Add cream cheese. Beat on high speed.

4Beat in sugar, then eggs.

5Reduce speed. Beat in cornstarch, lemon juice and vanilla, then margarine and sour cream.

6Pour into prepared pan.

7Bake at 325° for 70 minutes until firm.

8Turn oven off; let cake stand in oven for 2 hours. Remove and chill.

9Remove sides of pan.

10Makes 12 servings.
