  • 250 grams phillidelphia cream cheese
  • 400 ml condensed milk
  • 2 tbsp lemon rind
  • 1/3 cup fresh lemon juice
  • 250 grams granita biscuits
  • 125 grams butter
  • 600 ml thickened cream

    At room temp blend the cheese til creamy

    Add condensed milk, lemon juice and rind.

    Blend till smooth, refrigerate.

    Crush the biscuits and melt the butter combine til well mixed.

    Grease a round oven tray and line with baking paper.

    Pour biscuit mixture onto tray and using a flat bottomed glass press the mixture evenly around the tray.

    Refrigerate.

    Having refrigerated ingredients for 1 to 4hrs start layering your shot glasses with cheescake filling and cream.

    Next chop the biscuit slab into shards for decorating...Enjoy!
