- 2 (8 oz.) cream cheese
- 3/4 c. sugar
- 1 Tbsp. lemon juice
- 2 eggs, beaten
- 1 tsp. vanilla
Directions

1Beat the cream cheese until smooth.

2Add the rest of the ingredients and beat until smooth.

3Put a vanilla wafer cookie in bottom of cupcake tins lined with papers.

4Fill 2/3 full with mixture.

5Bake at 375° for 15 to 20 minutes.

6Cool and top with pie filling when ready to serve.

7Makes 14 to 16 cupcakes.
