- 5 lb. potatoes
- 1/2 lb. grated Cheddar cheese
- 1/2 c. (1 stick) margarine
- 2 c. (1 pt.) half and half
- 2 tsp. salt
Directions

1Boil potatoes until tender. Cool and skin. Coarsely grate into a 9 x 13-inch pan. Spread evenly in pan. Sprinkle with salt.

2Melt margarine and add half and half.

3Pour over potatoes.

4You may need to add a little milk to adjust for the dryness of your potatoes.

5Top with grated cheese.

6These can be made in advance and refrigerated before baking. Bake at 350° for 1 hour or until cheese is bubbly.
