- 4 large baking potatoes
- 4 strips bacon
- 1/3 c. chopped onion
- 1/3 c. chopped green pepper
- 2 c. sliced mushrooms
- 1 1/2 c. grated Cheddar cheese
- 2 Tbsp. milk
- 2 Tbsp. butter or margarine
- 1 egg, slightly beaten
- 1 tsp. salt
Directions

1Wash and dry potatoes.

2Pierce with a fork and bake at 425° for 50 to 60 minutes or until tender.

3Meanwhile, saute bacon in a skillet.

4Cool and crumble.

5In 2 tablespoons of bacon drippings, saute onion and green pepper, adding mushrooms, until cooked.
